How to Store Food So It Actually Lasts
Roughly a third of the food produced in the world is lost or wasted, and a large share of the household portion is not carelessness. It is food stored in a way that guaranteed it would spoil early — berries washed on Sunday, bread in the fridge, tomatoes in the crisper drawer next to a bag of apples.

The rule that follows is simple and does more work than any other single change: keep the two columns apart. Producers on the counter or in one drawer; sensitive items in the other. A bag of apples stored beside a head of broccoli will yellow it within days.
Two practical corollaries. Ripen deliberately — a paper bag traps ethylene and speeds things up; adding a banana speeds it further. And arrest ripening by moving fruit to the fridge once it reaches the state you want, since cold slows the hormone's effect. A peach ripened on the counter and then refrigerated stays good for days longer than one left out.
Mechanism two: moisture
Moisture is a balance rather than a direction. Too much and you get mould and bacterial slime; too little and you get wilting and shrivelling. Different foods want different points on that scale, which is exactly what the humidity sliders on crisper drawers control — a feature almost nobody uses.

Mushrooms belong in paper, not plastic. Plastic traps the moisture they release and turns them slimy. A paper bag lets it escape while preventing them drying out entirely.
Stand asparagus upright in a centimetre of water, like flowers, loosely covered. It stays crisp for a week rather than three days.
Soft herbs go in water; hardy herbs go in a damp cloth. Parsley, coriander and dill do well trimmed and stood in a jar of water in the fridge with a loose bag over the top. Rosemary, thyme and sage prefer to be wrapped in a slightly damp cloth. Basil is the exception to everything — it suffers chilling injury and should stay on the counter, in water, away from the fridge entirely.

Mechanism three: temperature, and what the fridge ruins
Cold slows almost everything, which is why the fridge is the default — though the temperatures that matter for safety are a different question from the ones that matter for quality. But several common foods are made worse by it, and for reasons worth knowing.
Tomatoes. Below roughly 12°C, tomatoes stop producing the volatile compounds that make them taste like tomatoes, and the enzymes involved are partially deactivated in a way that does not fully recover at room temperature. Research from the University of Florida published in PNAS traced this directly to chilling-induced changes in gene expression. Texture suffers too, as cell walls break down and the flesh turns mealy. Keep them on the counter, stem-side down, out of direct sun.
Bread. This is the most counter-intuitive one. Bread does not go stale by drying out — it goes stale through starch retrogradation, in which gelatinised starch recrystallises and forces out water. That process runs fastest just above freezing, meaning the fridge is the worst possible place to keep bread. Room temperature in a bread bin is better; the freezer is better still, because it skips the critical range. Slice before freezing and toast from frozen.
Potatoes. Cold converts potato starch to sugar, which makes them taste sweet and causes them to brown too fast and too dark when fried. Keep them in a cool, dark, ventilated place. And keep them away from onions, which release moisture and gases that encourage sprouting. (Notably, the UK's Food Standards Agency revised its long-standing advice in 2023 to say fridge storage is acceptable from a safety perspective — but the quality argument for a cupboard stands.)
Onions, garlic and winter squash. Cool, dark, dry, with airflow. Refrigeration makes onions soft and garlic sprout or turn rubbery. Keep them out of sealed plastic; a mesh bag or open basket is ideal.
Bananas, whole melons, unripe stone fruit. Cold causes chilling injury — blackened skins, arrested ripening, mealy flesh. Ripen on the counter, then refrigerate if you need to hold them.
Honey. Refrigeration accelerates crystallisation. A cupboard is fine, effectively forever; honey is one of the few foods that does not spoil.
Using your fridge properly
A refrigerator is not one temperature. It has a gradient, and placing food by that gradient is free.

Two points here matter more than the rest.
The door is the wrong place for milk and eggs, and it is where most fridges put moulded holders for exactly those items. Every time the door opens, that shelf gets a blast of room-temperature air. Milk and eggs keep better on an interior shelf.
Raw meat goes on the bottom shelf, always — not for temperature but for gravity. A leaking package on an upper shelf drips onto everything below it. This is the highest-consequence storage rule in the list, and it costs nothing.
Also: do not overpack. Refrigerators cool by circulating air, and a fridge crammed to the walls develops warm pockets. Aim for roughly three-quarters full.
Verify the temperature with a standalone thermometer. It should read at or below 40°F (4°C), with the freezer at 0°F (−18°C). The dial on the door is a setting, not a measurement, and seals degrade with age.
Freezing without ruining texture
The freezer is the most underused tool in a home kitchen, and the reason people distrust it is usually a technique problem.
Freezer burn is dehydration, not spoilage. It happens when ice sublimates directly from the food's surface into the freezer air, leaving dry, discoloured patches. The food remains safe; the texture does not. Prevention is entirely about excluding air: wrap tightly, press cling film onto the surface, squeeze air out of bags, or use a vacuum sealer.
Freeze fast, in small portions. Slow freezing produces large ice crystals that puncture cell walls, so the food weeps when thawed. Thin, flat packages freeze faster and stack better than blocks.
Some things freeze badly, and it is worth knowing which before you are disappointed: high-water vegetables eaten raw (lettuce, cucumber), whole eggs in shell, cream-based sauces (they split), fried food (it goes soggy), and most soft cheeses.
Label everything with contents and date. Frozen food remains safe indefinitely at 0°F but quality declines, and an unlabelled block of something orange from an unknown month is destined for the bin.
Thaw in the fridge, never on the counter — the surface reaches room temperature and sits there for hours while the centre is still frozen.
Date labels, and the waste they cause
This may save more food than everything above combined, because it is a labelling problem rather than a storage one.
"Use by" is a safety date. It appears on genuinely perishable items — fresh meat, fish, some dairy, prepared salads. Do not eat food after it, even if it looks and smells fine, because the pathogens involved do not announce themselves.
"Best before" is a quality date. It is the manufacturer's estimate of peak texture and flavour. Dried pasta, tinned goods, biscuits, flour and most store-cupboard staples are typically fine well past it. Judge them on how they look, smell and taste.
Labels such as "sell by" and "display until" are instructions to the retailer about stock rotation. They are not about you at all.
The gap between these is expensive. Studies of household food waste consistently find date-label confusion among the largest contributors, with people discarding perfectly good food on the day a quality date passes. The fix is nothing more than reading which of the two words is printed.
